What’s cooking in her kitchen- Fried Samp recipe

Have you ever wondered during this lockdown what to cook for your family! With the whole family at home full time, it must be stressful to decide on what to cook. It’s a bit challenging to come up with a new and different meal every day. But hey we got you covered. Here is a simple recipe for fried samp which you can try. It is less expensive and can be done within a short space of time.

Ingredients
 3 cups mealie rice. The mealie rice must be soaked in water and washed off of starch
 Salt
 4 cups water
 Cooking oil
 1 king onion
 2 tomatoes
 1 green pepper
 1 yellow pepper
 ½ teaspoon black pepper
 1 egg

Method

  1. Boil water and add a pinch of salt + 3 tablespoons of cooking oil.
  2. Add the mealie rice and cook for about an hour or more until well cooked.
  3. In a separate pot or saucepan, heat 2 serving spoons of cooking oil. Add chopped onions and fry for a few minutes and add tomatoes. Close the lid.
  4. When the tomatoes and onions are fully cooked, add the mealie rice and fry a bit.
  5. Add mixed pepper and stir until well blended.
  6. Leave on low heat for 3-5 minutes.
    (You may add turmeric).

Serve with a cup of herbal tea to warm up your body!!!
